This year's theme is focused around Australian wines: "Vines Down Under." You'll be indulging in fine wines from Australia and surrounding regions that are paired with delectable courses throughout the dinner.
Te Mata Estate Winery, Hawke's Bay, New Zealand

Cape Crest Sauvignon Blanc 2022 - Since 1984, Cape Crest has developed an international following for it’s unique expression of New Zealand Sauvignon Blanc. Barrel fermented, with a touch of Semillon and Sauvignon Gris, it is concentrated and compex with toast, citrus blossom, pear and stonefruit characters. Paired with grilled asparagus goat cheese tart, lemon zest, herbs.

Coleraine Cabernet Sauvignon 2022 - Primarily Cabernet Sauvignon, Merlot, and Cabernet Franc, it is known for its complex aromas of dark fruits, cedar, and floral notes, a velvety texture, fine tannins, and long, elegant finish, making it a celebrated Bordeaux-style wine with excellent aging potential. Paired with California lamb rack, mushroom wellington, rosemary red wine au jus.
Penfolds Vineyards, South Australia

Bin 311 Chardonnay, 2022 - Bin 311 Chardonnay truly reflects the winemakers' mantra of going where the fruit grows best. Exhibits lemon/lime aromas and a mineral acid backbone, complemented by barrel fermentation and maturation in mostly seasoned oak. Minimal filtration is employed, preserving elegant fruit flavors. Paired with butternut squash risotto.

Bin 51 Riesling, 2023 - South Australia has gained worldwide recognition for producing definitive world-class riesling and Eden Valley always features. In the 2023 vintage, explore typical Eden Valley aromatics of lifted orange blossom & freshly diced pink lady apples. The palate brims with alluring flavours of blood orange, passionfruit & lime, balanced with a natural zesty lemon acid. Paired with cherry tomato, basil, olive oil, camembert cheese
St. Henri Shiraz, 2017 - A suggestion of fine salinity aligns with mouth-watering acidity. The dark cacoa tannins are so fine they could be spun from silk. Will age and evolve beautifully for decades. Paired with miso-glazed cod, shallots and microgreens.


Torbreck Vintners, Barossa Valley, South Australia
Grenache Hillside Vineyard Barossa, 2022 - Lifted aromas of damson plum, red currant, cranberry and red cherry lift from the glass. Intermingling the red fruits is secondary notes of beef jerky, wild shitake mushrooms, clove and white pepper. The palate has an abundance of red fruits and velvety texture complimenting spice notes with soft elongated tannins and cleansing acidity. Paired with pork belly with crackling apple bush chutney, spiced sweet potato cake.
